Food & RecipesBeef Brisket

We get it — our new Carson Valley Meats Beef Cuts & Cooking Cookbook is full of recipes, tips, and rancher wisdom. That can feel like a lot if you’re just getting started. So let’s keep it simple: start with one cut, one roast, and turn it into two meals.

That cut? Brisket.
It’s a ranch favorite — flavorful, hearty, and the definition of comfort when cooked low and slow. And the best part? Leftovers transform beautifully into a ranch-style breakfast hash the next day.

Here’s how to do it. (Download our Carson Valley Meats Brisket Quick Start Guide here!)

Classic Smoked Brisket

    • 1 whole beef brisket (5–6 lb, trimmed)
    • 2 tbsp kosher salt
    • 2 tbsp coarse black pepper
    • 2 tbsp smoked paprika
    • 1 tbsp garlic powder
    • 1 tbsp onion powder
    • 2 tbsp brown sugar
    • Beef broth for spritzing

Instructions

    1. Trim brisket, leaving a ¼” fat cap.
    2. Mix salt, pepper, paprika, garlic powder, onion powder, and brown sugar. Rub all over brisket.
    3. Smoke at 225°F for 6–8 hours, spritzing occasionally with beef broth.
    4. Wrap in butcher paper or foil at 165°F internal temp, then continue cooking to 200–205°F.
    5. Rest for 1 hour before slicing against the grain.
